The site was at the rearmost section of the restaurant floor, and had L-shaped with a narrow front. This meant it was difficult for people to even know the entrance was there. The theme was how do we make the restaurant interior feel open, bright and easy to see? Particularly, what was the way to make the appearance of a busy & lively shopfront?
The solution we came up with was to install a curved counter which protruded out noticeably and included seating. We arranged the face of the restaurant – the pizza oven – in the centre behind the counter, establishing a scene of customers enjoying their meals while the delicious smell of pizza wafts out. In Japan one of the family precepts of Omi shonin is known to be that of “Sanpo Yoshi” (benefit for all three sides), which teaches that in their Business the merchant should take into consideration the benefits for the customer, the seller, and society at the same time. Now in this restaurant we think at the point of the service it should be good for the customer, the cook, the producer. At the point of the menu it should be good for the productions in a field, in the sea, in a mountain. “Good in three directions” we create the restaurant under this concept. As for the design, we primarily express our concept through the use of distinct triangular shapes. With inbuilt lighting within the material of all these shapes, we sharply accentuate their outlines, producing a sense of depth by contrasting light against the shadows.
